Iberian Bellota Noble Castellana (Extremadura). Coming from raised in the dehesas and fed with acorns during the montanera with replacements superior to 4 arrobas of acorn. In its manufacturing process it is cooled and cut in V, reduced external bacon, salted, washed, balanced, dried and aged in the cellar.
