Pauline, my great-grandmother founded this vineyard in the early twentieth century and it seemed natural to pay tribute to this little, enterprising woman who always tried to help. For her we have developed one of the rare “flint Sancerres” fermented in acacia barrels and oak barrels, according to the traditions of my grandfather, Paul Cantin known as Robert. It’s still a secret! He was a cooper, and after the war, shortages of certain timber species required working with little used woods, therefore he manufactured acacia barrels used for his own wine. I have great enthusiasm for tasting wines which were made in this fashion, so I chose to draw inspiration from his life to give birth to this wine dedicated to my ancestors and the enjoyment of taste buds!
