Every week, pigs are picked on the field one by one to make the best possible ham. Carefully prepared by Salamanca craftsmen, we then monitor the curing of each piece, ensuring that each one of them has a fabulous taste. One of our “jamón Bellota” (leg of a wild black pig fed with acorn) can age up to 48 months in the Guijuelo mountains, monitoring both temperature & humidity!
