Harvest and Vinification
Manual harvest. Scratched harvest. Mutage on grains followed by a 30-day maceration to extract the material (aroma, polyphenols) contained in the berries and thus obtain a beautiful balanced structure between fruit, alcohol and sugar. Aged for one year in glass carboys placed outside, followed by 27 years in 350 hl oak barrels. This particularly long ageing, a true signature of Mas Amiel, allows the wine to acquire great maturity in terms of aromas and structure.
Tiled color with coffee reflections. The nose reveals intense notes of mocha, espresso and dried fig, accompanied by fresh, more peppery notes. The palate is surprising, both for its frank and powerful attack and for its surprising acidity for a wine of this age. Notes of fig and walnut assert themselves on a perfect balance between alcohol, sugar and acidity, the mocha in the end comes back.
